Dynamesh topology tends to be very high and can produce a lot of artefacts in the surface of the mesh, you will always get a better result with hand retopology ... When you leave edit mode the model on screen gets converted into pixols. It's no longer a 3d model at that point, which is why you were not able to enter edit mode. You can hit Ctrl+N to clear the document of those pixols, redraw the tool onto the document again, and then re-enter edit mode.
